Ingredients

  • 23 cups cooked, shredded chicken (rotisserie or boiled)
  • 8 oz spaghetti noodles, cooked al dente
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes (optional, undrained)
  • ½ cup chicken broth
  • 2 cups shredded cheddar or Velveeta cheese
  • Optional: 2 oz cream cheese or ½ cup sour cream
  • Salt, pepper, garlic powder, and onion powder to taste
  • Optional: diced bell peppers, mushrooms, or green peas

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook spaghetti until just al dente. Drain and set aside.
  3. In a large bowl, mix cream of mushroom soup, cream of chicken soup, Rotel, chicken broth, cheese, and seasonings.
  4. Add cream cheese or sour cream if using, and mix well.
  5. Stir in cooked spaghetti and shredded chicken until evenly coated.
  6. Pour mixture into prepared baking dish and spread evenly.
  7. Top with extra cheese or breadcrumbs if desired.
  8. Bake uncovered for 25–30 minutes, until hot and bubbly.
  9. Let rest for 5–10 minutes before serving.

Notes

Use freshly shredded cheese for a smoother sauce. Let the casserole rest before slicing to help it set. Easily customizable with veggies or spice!
