- 2–3 cups cooked, shredded chicken (rotisserie or boiled)
- 8 oz spaghetti noodles, cooked al dente
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can Rotel tomatoes (optional, undrained)
- ½ cup chicken broth
- 2 cups shredded cheddar or Velveeta cheese
- Optional: 2 oz cream cheese or ½ cup sour cream
- Salt, pepper, garlic powder, and onion powder to taste
- Optional: diced bell peppers, mushrooms, or green peas
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook spaghetti until just al dente. Drain and set aside.
- In a large bowl, mix cream of mushroom soup, cream of chicken soup, Rotel, chicken broth, cheese, and seasonings.
- Add cream cheese or sour cream if using, and mix well.
- Stir in cooked spaghetti and shredded chicken until evenly coated.
- Pour mixture into prepared baking dish and spread evenly.
- Top with extra cheese or breadcrumbs if desired.
- Bake uncovered for 25–30 minutes, until hot and bubbly.
- Let rest for 5–10 minutes before serving.
Notes
Use freshly shredded cheese for a smoother sauce. Let the casserole rest before slicing to help it set. Easily customizable with veggies or spice!
